🏋️‍♀️ Savory Cornbread Waffles

Why It’s Great: A strong, no-fuss waffle built to fuel mornings, game days, or debates about the superiority of cast iron. Adaptable, satisfying, and a reminder that sometimes the simplest win is also the fiercest. And hey, no waffle iron? No problem!

Ingredients

  • 1 box Jiffy Corn Muffin Mix
  • 1 egg or flax egg See Notes
  • cup milk any kind: dairy, oat, almond, tears of joy
  • ¼ cup shredded cheese of your choosing
  • 2 tbsp chopped chives or green onion
  • 👆🏽 AlternatIves - 1 tbsp dried chives or 1 tsp dried minced onion, or ⅛ tsp onion powder
  • Optional: 2 tbsp cooked bacon or vegan bacon
  • Salt & pepper to taste

Instructions

  • Preheat waffle iron (or skillet – See Notes)
  • Mix all ingredients in a bowl until just combined.
  • Spoon into waffle iron and cook until golden with crisp edges.
  • Serve hot. These don’t loiter.

Notes

 
🌱🥚 Flax egg? Mix 1 tbsp ground flaxseed with 2½ tbsp water and let it sit for 5 minutes. It thickens into a gel and works like an egg in baking—great for anyone out of eggs and wondering who is responsible.
 
🍳 No waffle iron? Cook as pancakes in a lightly oiled skillet, 2–3 min per side.
💡 Serving ideas: Sour cream, hot sauce, or sliced avocado. Skip the syrup unless you’re feeling diplomatic.
